肉解凍後沒全部料理完該怎麼辦?

有幾個關於料理的問題想請問一下。

1.肉解凍後，若沒全部料理完再拿回去冷凍，這樣重複兩三次下來，會不會

　變質？該怎麼處理比較好？

　夏天把肉拿出來放在室溫下解凍，等個30分後只取一部分，很怕另外沒用

　到的會變質@@

2.肉下鍋前需要洗嗎？　該怎麼洗，跟怎麼解凍好？

3.豆腐料理前需要洗嗎？　該怎麼洗跟處理好？
